The meal we have the hardest time with around here – is breakfast. Because I have never been a huge breakfast person, I realize with our morning routine – breakfast is the first thing left out. However you know what they say about breakfast being the “most important meal of the day” so recently I have tried to change our routine and have quick, easy, and tasty breakfast food ready to grab and go. I began making these “Low Carb” (but relatively high fat – which is what makes them “Guilty”) Breakfast Muffins every Sunday and they last all week long. The recipe yields about 18 “muffins” – which reheat perfectly from chilled or frozen right in the microwave.
