Recently I purchased the Gourmet Nutrition Cookbook on a recommendation from my personal trainer. He said there were some amazing recipes that even *I* could master… I chose not to take offense to that. One that he pointed out in particular was Thai Ground Beef – a meal that you can enjoy any time during the day and not feel guilty about it since it is low in calories and fa, but high in protein. I decided to give it a shot … and we all fell completely in love with it.
Last week when I was at the store, Winn Dixie was having a great sale on cube steak – a meat I just learned how to cook recently in the Crock Pot. But I wanted to try something different this time and headed over to Google to see what I could find. Since I had so much fun last week with the Mexican Chicken Casserole and literally just throwing things in that I had on hand, I wanted to do the same with this – but I needed some inspiration. The one recipe I kept seeing over and over was Cube Steak Parmesan. Now I have never even tried Chicken Parmesan so I decided to give it a shot. The family LOVED it. Mike moreso than anyone and he is hard to please.
Mike’s favorite food in the whole world is Pizza. When I met him he literally did not have a single thing to eat in his house besides frozen pizzas. Ahh, my darling bachelor. I, however, am not a fan of pizza, and really have to be in the right mood for it… and even then I only want it like twice a year. Lasagna, on the other hand, I can eat all day every day. Just call me Garfield….. wait, did I just show my age?
So, in a wonderful experiment gone deliciously right, I put the two together in a mash of cheesy goodness hoping they would pair together as well as my love and I have… and they did. This is a meal that Mike loved, *I* loved, and the girls begged for seconds.
I had never purchased “cube steak” before in my life until this week. In fact I never even had the desire to – with my weird aversion to meat nothing even sounded remotely appetizing about “cube steak.” Plus everything I had heard compared the cut of meat to a shoe sole, so I just overlooked it at the store.
Wow was I wrong. It isnt pretty…. but its amazing!
A few months ago we went to Wednesday Night Supper at church where they were serving “Taco Chili” – I nearly turned on my heels and left. I didn’t think that even SOUNDED appetizing. It isn’t that I don’t like tacos or chili… I just never would have put them together in one bowl. However, since my friends were there and the girls were “starving” we stayed. I have to admit – it was AWESOME. Like, I was considering getting seconds.
